Prosciutto di San Daniele PDO is Parma's great rival, cured only in the town of San Daniele del Friuli, where Adriatic breezes meet Alpine air. Made from Italian pork and sea salt with the trotter left on, each ham is stamped with the San Daniele mark and has a sweeter, more delicate character.
The imitation is any generic Italian-style ham. Only hams cured in that one Friulian town, trotter attached, may bear the name.
