Comté

Comté PDO is France's most-produced cheese and one of its most revered — a firm, fruity Alpine cheese from the Jura massif, made from the raw milk of Montbéliarde cows grazing mountain pastures and aged in vast cellars for months or years. Each village fruitière still makes its own subtly different wheels.

The imitation is generic ‘Gruyère-style’ or ‘Swiss-style’ cheese from an industrial dairy. Real Comté comes only from the Jura, with the green PDO bell on the rind.
